- ●1 medium Onion, chopped
- ●2 medium Carrot, chopped
- ●2 stalks Celery, chopped
- ●2 cloves Garlic, minced
- ●1 cup Brown or Green Lentils, rinsed
- ●1 (14.5 ounce) can Diced Tomatoes
- ●6 cups Vegetable Broth
- ●1 teaspoon Dried Thyme
- ●1 Bay Leaf
- ●1 teaspoon Salt
- ●1/2 teaspoon Black Pepper
- ●1 tablespoon Lemon Juice
Instructions
- 1Heat olive oil in a large pot or Dutch oven over medium heat.
- 2Add onion, carrot, and celery and cook, stirring occasionally, until softened, about 5-7 minutes.
- 3Add garlic and cook for 1 minute more, until fragrant.
- 4Stir in lentils, diced tomatoes, vegetable broth, thyme, and bay leaf. Season with salt and pepper.
- 5Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
- 6Remove bay leaf. Stir in lemon juice.
- 7Serve hot with a drizzle of olive oil or a dollop of yogurt, if desired.
