Ingredients

  • 2 Salmon fillets
  • 1-2 tablespoons Green curry paste
  • 2 tablespoons Coconut milk
  • 1 squeeze Lime juice
  • 1 pinch Salt
  • 1 clove Garlic
  • 1 teaspoon Oil
  • to taste Fish sauce
  • to taste Sugar
  • for garnish Cilantro or basil

Instructions

  1. 1Pat the salmon dry with paper towels.
  2. 2In a bowl, mix green curry paste, coconut milk, lime juice, and salt.
  3. 3Gently coat the salmon fillets with the curry mixture.
  4. 4Preheat your air fryer to 400°F (200°C).
  5. 5Place the salmon in the air fryer basket, skin side down if it has skin.
  6. 6Air fry for about 8-12 minutes, depending on the thickness of your fillets, until cooked through and flaky.
  7. 7While the salmon is air frying, sauté minced garlic in a pan with oil.
  8. 8Add the rest of your can of coconut milk and a little more green curry paste to taste. Simmer until slightly thickened.
  9. 9Taste and adjust seasonings – maybe a touch of fish sauce or soy sauce for umami, and a little sugar or honey for balance.
  10. 10Serve the air-fried salmon over rice or noodles, topped with the optional sauce and a sprinkle of fresh cilantro or basil.
