Lemon-Garlic Pasta with Shrimp

Ingredients

  • 8 ounces Pasta (spaghetti or linguine)
  • 1/2 pound Shrimp (peeled and deveined)
  • 2 tablespoons Olive oil
  • 3 cloves Garlic (minced)
  • 1/4 teaspoon Red pepper flakes
  • 2 tablespoons Lemon juice
  • 2 tablespoons Butter
  • 2 tablespoons Fresh parsley (chopped)
  • to taste Salt
  • to taste Black pepper

Instructions

  1. 1Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. 2While pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes and cook for about 30 seconds, until fragrant.
  3. 3Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.
  4. 4Remove skillet from heat. Stir in lemon juice, butter, salt, and pepper.
  5. 5Add the drained pasta to the skillet and toss to coat. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  6. 6Serve immediately, garnished with fresh parsley.
