- ●1/2, zested and juiced Lemon
- ●1 teaspoon, chopped Fresh thyme
- ●1 clove, minced Garlic
- ●1/4 teaspoon Salt
- ●1/4 teaspoon Black pepper
- ●150g, sliced Mushrooms
- ●1/4 cup Heavy cream
- ●1 tablespoon Butter
- ●1 tablespoon, chopped Fresh parsley
Instructions
- 1Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
- 2In a bowl, combine the cod pieces with olive oil, lemon zest, lemon juice, thyme, minced garlic, salt, and pepper. Toss to coat evenly.
- 3Arrange the cod pieces on the prepared baking sheet in a single layer.
- 4Bake for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.
- 5While the cod is baking, prepare the mushroom dip. Melt butter in a skillet over medium heat.
- 6Add the sliced mushrooms to the skillet and cook until softened and lightly browned, about 5-7 minutes.
