Ingredients

  • 200g, cut into bite-sized pieces Cod fillets
  • 2 tablespoons Olive oil
  • 1/2, zested and juiced Lemon
  • 1 teaspoon, chopped Fresh thyme
  • 1 clove, minced Garlic
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 150g, sliced Mushrooms
  • 1/4 cup Heavy cream
  • 1 tablespoon Butter
  • 1 tablespoon, chopped Fresh parsley

Instructions

  1. 1Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. 2In a bowl, combine the cod pieces with olive oil, lemon zest, lemon juice, thyme, minced garlic, salt, and pepper. Toss to coat evenly.
  3. 3Arrange the cod pieces on the prepared baking sheet in a single layer.
  4. 4Bake for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.
  5. 5While the cod is baking, prepare the mushroom dip. Melt butter in a skillet over medium heat.
  6. 6Add the sliced mushrooms to the skillet and cook until softened and lightly browned, about 5-7 minutes.
