- ●1 medium Onion, chopped
- ●2 cloves Garlic, minced
- ●12 ounces Smoked sausage (kielbasa or andouille), sliced
- ●2 (15-ounce) cans Canned black beans, rinsed and drained
- ●1 (14.5-ounce) can Canned diced tomatoes, undrained
- ●1 cup Beef broth
- ●1 Bay leaf
- ●1/2 Orange, zested
- ●to taste Hot sauce
- ●for serving Cooked rice
Instructions
- 1Heat olive oil in a large pot or Dutch oven over medium heat.
- 2Add onion and cook until softened, about 5 minutes.
- 3Add garlic and sausage and cook for another 3 minutes, until sausage is lightly browned.
- 4Stir in black beans, diced tomatoes, beef broth, bay leaf, and orange zest.
- 5Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally, to allow flavors to meld.
- 6Remove bay leaf. Season with hot sauce to taste.
- 7Serve hot over cooked rice.
