Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 12 ounces Smoked sausage (kielbasa or andouille), sliced
  • 2 (15-ounce) cans Canned black beans, rinsed and drained
  • 1 (14.5-ounce) can Canned diced tomatoes, undrained
  • 1 cup Beef broth
  • 1 Bay leaf
  • 1/2 Orange, zested
  • to taste Hot sauce
  • for serving Cooked rice

Instructions

  1. 1Heat olive oil in a large pot or Dutch oven over medium heat.
  2. 2Add onion and cook until softened, about 5 minutes.
  3. 3Add garlic and sausage and cook for another 3 minutes, until sausage is lightly browned.
  4. 4Stir in black beans, diced tomatoes, beef broth, bay leaf, and orange zest.
  5. 5Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally, to allow flavors to meld.
  6. 6Remove bay leaf. Season with hot sauce to taste.
  7. 7Serve hot over cooked rice.
