Ingredients

  • 1/2, chopped Bell pepper
  • 1/2, chopped Zucchini
  • 1/2 cup, halved or quartered Cherry tomatoes
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Pepper
  • 1/4 teaspoon Dried oregano
  • 1 slice Bread
  • 1/4 cup Ricotta cheese
  • 1 teaspoon Extra virgin olive oil

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Chop bell pepper, zucchini, and cherry tomatoes into bite-sized pieces.
  3. 3Toss vegetables with olive oil, salt, pepper, and dried oregano.
