Shrimp and Chorizo Breakfast Burrito

Ingredients

  • 12 large shrimp
  • 4 oz chorizo
  • 4 large eggs
  • 1/4 cup milk or cream
  • 1/2 cup black beans
  • 1/4 cup red onion
  • 1/4 cup cilantro
  • 1 avocado
  • 4 large flour tortillas
  • 1 tbsp olive oil
  • to taste Salt and pepper
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp chipotle peppers in adobo sauce
  • 1 tbsp lime juice

Instructions

  1. 1In a small bowl, combine sour cream, minced chipotle peppers, and lime juice. Mix well and set aside.
  2. 2Heat olive oil in a large skillet over medium heat. Add chorizo and cook, breaking it up with a spoon, until browned and cooked through. Remove chorizo from skillet and set aside.
  3. 3In the same skillet, add shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Season with salt and pepper. Remove shrimp from skillet and set aside.
  4. 4In a bowl, whisk together eggs and milk or cream. Season with salt and pepper. Pour egg mixture into the skillet and cook, stirring occasionally, until eggs are set but still slightly moist.
  5. 5Warm tortillas in a dry skillet or microwave until pliable.
  6. 6Spread a layer of chipotle crema on each tortilla. Divide scrambled eggs, chorizo, shrimp, black beans, red onion, cilantro, and avocado evenly among the tortillas.
  7. 7Fold in the sides of each tortilla, then fold up the bottom and roll tightly to form a burrito.
  8. 8Serve immediately.
