- ●4 oz chorizo
- ●4 large eggs
- ●1/4 cup milk or cream
- ●1/2 cup black beans
- ●1/4 cup red onion
- ●1/4 cup cilantro
- ●1 avocado
- ●4 large flour tortillas
- ●1 tbsp olive oil
- ●to taste Salt and pepper
- ●1/2 cup sour cream or Greek yogurt
- ●1 tbsp chipotle peppers in adobo sauce
- ●1 tbsp lime juice
Instructions
- 1In a small bowl, combine sour cream, minced chipotle peppers, and lime juice. Mix well and set aside.
- 2Heat olive oil in a large skillet over medium heat. Add chorizo and cook, breaking it up with a spoon, until browned and cooked through. Remove chorizo from skillet and set aside.
- 3In the same skillet, add shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Season with salt and pepper. Remove shrimp from skillet and set aside.
- 4In a bowl, whisk together eggs and milk or cream. Season with salt and pepper. Pour egg mixture into the skillet and cook, stirring occasionally, until eggs are set but still slightly moist.
- 5Warm tortillas in a dry skillet or microwave until pliable.
- 6Spread a layer of chipotle crema on each tortilla. Divide scrambled eggs, chorizo, shrimp, black beans, red onion, cilantro, and avocado evenly among the tortillas.
- 7Fold in the sides of each tortilla, then fold up the bottom and roll tightly to form a burrito.
- 8Serve immediately.
