- ●200g Spaghetti
- ●150g, diced Chicken breast
- ●2 large Egg yolks
- ●50g, grated Parmesan cheese
- ●1 tbsp Olive oil
- ●1 clove, minced Garlic
- ●1/2 tsp, freshly ground Black pepper
- ●to taste Salt
Instructions
- 1Cook spaghetti according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
- 2While the pasta is cooking, heat olive oil in a pan over medium heat. Add diced chicken and garlic, and cook until chicken is cooked through and lightly browned, about 5-7 minutes. Season with salt and pepper.
- 3In a bowl, whisk together egg yolks, grated Parmesan cheese, and black pepper.
- 4Drain the spaghetti and add it to the pan with the chicken. Toss to combine.
- 5Remove the pan from the heat. Quickly pour the egg yolk mixture over the hot pasta, tossing constantly to create a creamy sauce. Add a little of the reserved pasta water if needed to adjust the consistency.
- 6Serve immediately, garnished with extra Parmesan cheese and black pepper, if desired.
