Reina Pepiada Arepas

- ●2 cups Pre-cooked arepa flour (P.A.N.)
- ●2 1/2 cups Water
- ●1 teaspoon Salt
- ●2 cups shredded Cooked chicken breast
- ●2 ripe Avocados
- ●1/2 cup Mayonnaise
- ●1/4 cup chopped Cilantro
- ●1 tablespoon Lime juice
- ●to taste Salt
- ●to taste Black pepper
Instructions
- 1In a bowl, mix the arepa flour, water, and salt until a soft dough forms. Let it rest for 5 minutes.
- 2Divide the dough into 8 equal portions and shape them into patties about 1/2 inch thick.
- 3Heat a lightly oiled griddle or pan over medium heat. Cook the arepas for about 5-7 minutes per side, until golden brown and cooked through.
- 4While the arepas are cooking, prepare the Reina Pepiada filling. In a bowl, mash the avocados and mix with the shredded chicken, mayonnaise, cilantro, and lime juice.
- 5Season the filling with salt and pepper to taste.
- 6Once the arepas are cooked, let them cool slightly. Slice them open horizontally and fill with the Reina Pepiada mixture.
- 7Serve immediately and enjoy!
