Ingredients

  • 2 cups Pre-cooked arepa flour (P.A.N.)
  • 2 1/2 cups Water
  • 1 teaspoon Salt
  • 2 cups shredded Cooked chicken breast
  • 2 ripe Avocados
  • 1/2 cup Mayonnaise
  • 1/4 cup chopped Cilantro
  • 1 tablespoon Lime juice
  • to taste Salt
  • to taste Black pepper

Instructions

  1. 1In a bowl, mix the arepa flour, water, and salt until a soft dough forms. Let it rest for 5 minutes.
  2. 2Divide the dough into 8 equal portions and shape them into patties about 1/2 inch thick.
  3. 3Heat a lightly oiled griddle or pan over medium heat. Cook the arepas for about 5-7 minutes per side, until golden brown and cooked through.
  4. 4While the arepas are cooking, prepare the Reina Pepiada filling. In a bowl, mash the avocados and mix with the shredded chicken, mayonnaise, cilantro, and lime juice.
  5. 5Season the filling with salt and pepper to taste.
  6. 6Once the arepas are cooked, let them cool slightly. Slice them open horizontally and fill with the Reina Pepiada mixture.
  7. 7Serve immediately and enjoy!
