- ●1 cup Masarepa (pre-cooked corn flour)
- ●1 cup Warm water
- ●1/2 teaspoon Salt
- ●1 ripe Avocado
- ●1 cup shredded Cooked chicken breast
- ●2 tablespoons Mayonnaise
- ●1/4 cup finely chopped Red onion
- ●2 tablespoons chopped Cilantro
- ●1 tablespoon Lime juice
- ●to taste Salt
- ●to taste Black pepper
- ●2 tablespoons Vegetable oil
Instructions
- 1In a bowl, mix the masarepa, warm water, and salt until a soft dough forms. Let it rest for 5 minutes.
- 2Divide the dough into 2 equal portions. Shape each portion into a ball, then flatten into a disc about 1/2 inch thick.
- 3Heat the vegetable oil in a skillet over medium heat. Cook the arepas for about 5-7 minutes per side, until golden brown and cooked through. Alternatively, you can use an air fryer at 375F for 10-12 minutes, flipping halfway.
- 4While the arepas are cooking, prepare the Reina Pepiada filling. In a bowl, mash the avocado. Add the shredded chicken, mayonnaise, red onion, cilantro, and lime juice. Season with salt and pepper to taste.
- 5Once the arepas are cooked, let them cool slightly. Slice them open horizontally, like a pita pocket.
- 6Fill each arepa with the Reina Pepiada filling. Serve immediately.
