Ingredients

  • 1 cup Masarepa (pre-cooked corn flour)
  • 1 cup Warm water
  • 1/2 teaspoon Salt
  • 1 ripe Avocado
  • 1 cup shredded Cooked chicken breast
  • 2 tablespoons Mayonnaise
  • 1/4 cup finely chopped Red onion
  • 2 tablespoons chopped Cilantro
  • 1 tablespoon Lime juice
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons Vegetable oil

Instructions

  1. 1In a bowl, mix the masarepa, warm water, and salt until a soft dough forms. Let it rest for 5 minutes.
  2. 2Divide the dough into 2 equal portions. Shape each portion into a ball, then flatten into a disc about 1/2 inch thick.
  3. 3Heat the vegetable oil in a skillet over medium heat. Cook the arepas for about 5-7 minutes per side, until golden brown and cooked through. Alternatively, you can use an air fryer at 375F for 10-12 minutes, flipping halfway.
  4. 4While the arepas are cooking, prepare the Reina Pepiada filling. In a bowl, mash the avocado. Add the shredded chicken, mayonnaise, red onion, cilantro, and lime juice. Season with salt and pepper to taste.
  5. 5Once the arepas are cooked, let them cool slightly. Slice them open horizontally, like a pita pocket.
  6. 6Fill each arepa with the Reina Pepiada filling. Serve immediately.
