Ingredients

  • 500g Pancit Malabon Noodles
  • 6 cups Shrimp or Fish Broth
  • 6 cloves Garlic
  • 250g Ground Pork
  • 3 tablespoons Fish Sauce
  • 2 tablespoons Annatto Powder
  • 2 tablespoons Cornstarch
  • 3 Hard-boiled Eggs
  • 1 cup Chicharon (pork cracklings)
  • 1/2 cup Scallions
  • 1/4 cup Toasted Garlic
  • 250g Shrimp (optional)
  • 1 cup Oysters (optional)

Instructions

  1. 1Sauté garlic in a pot, then add ground pork and cook until browned.
  2. 2Add the broth, fish sauce, and annatto powder to the pot.
  3. 3Thicken the sauce with cornstarch slurry (cornstarch mixed with water).
  4. 4Prepare hard-boiled eggs, crush chicharon, chop scallions, and toast garlic. If using shrimp, blanch quickly.
  5. 5Cook noodles according to package directions.
  6. 6Toss the cooked noodles with the sauce.
  7. 7Arrange the toppings artfully over the noodles.
