Ingredients

  • 1 cup Cooked rice
  • 4 oz Tofu
  • 1/2 Avocado
  • 1/2 English cucumber
  • 1/4 cup Coleslaw mix
  • 1 tbsp Soy sauce or tamari
  • 1 tsp Rice vinegar
  • to taste Sriracha

Instructions

  1. 1Cook rice according to package directions. If using rice vinegar, mix it into the cooked rice.
  2. 2While the rice is cooking, cube the tofu and pan-fry or bake until golden brown. Toss with soy sauce or tamari for extra flavor.
  3. 3Chop the avocado and cucumber.
  4. 4Assemble the bowl: rice on the bottom, then arrange the tofu, avocado, cucumber, and coleslaw mix on top.
