Ingredients

  • 4 oz Leftover Salmon
  • 2 oz Feta Cheese
  • 1/2 cup Cherry Tomatoes
  • 3 large Eggs
  • 1/4 cup diced Sweet Onion
  • 1/4 teaspoon Curry Powder (mild)
  • 2 tablespoons chopped Fresh Cilantro
  • 1 tablespoon Milk
  • 1 teaspoon Butter or Olive Oil

Instructions

  1. 1Dice the sweet onion and halve the cherry tomatoes. Flake the leftover salmon. Crumble the feta. Chop the cilantro.
  2. 2Sauté the sweet onion in butter or olive oil over medium heat until softened and slightly golden.
  3. 3Whisk the eggs with milk and curry powder.
  4. 4Pour the egg mixture into the pan with the onions. Gently cook, stirring occasionally, until the eggs are mostly set but still slightly moist.
