Instant Pot Butter-Braised Yukon Gold Potatoes

Ingredients

  • ●2 pounds Yukon Gold potatoes
  • ●2 tablespoons unsalted butter
  • ●1/3 cup chicken, vegetable, or meat stock
  • ●1 large pinch salt
  • ●1/4 teaspoon freshly ground black pepper
  • ●2 medium scallions

Instructions

  1. 1Peel the Yukon Gold potatoes and quarter them into roughly equal-sized pieces to ensure even cooking.
  2. 2Set your Instant Pot to the "Sauté" function on normal. Add the unsalted butter and allow it to melt.
  3. 3Add the quartered potatoes to the Instant Pot. Stir gently to coat them in the butter. If desired, allow them to sauté for 3-5 minutes, stirring occasionally, to develop a slight golden crust.
  4. 4Pour in the 1/3 cup of stock. Use a wooden spoon to scrape up any browned bits from the bottom of the pot; this is crucial to prevent a "Burn" error and adds flavor. Add a large pinch of salt and a few grinds of black pepper.
  5. 5Secure the lid on the Instant Pot and ensure the venting knob is in the "Sealing" position. Select the "Manual" or "Pressure Cook" setting and set the timer for 7 minutes on high pressure.
  6. 6Once the cooking cycle is complete, allow for a Natural Pressure Release (NPR) for 5 minutes. Then, carefully switch the venting knob to the "Venting" position for a Quick Release (QR) of any remaining pressure.
  7. 7Carefully remove the lid. The potatoes should be fork-tender and bathed in a flavorful, buttery stock. Taste and adjust seasoning with additional salt and pepper if needed.
  8. 8Transfer the potatoes to a serving dish and garnish generously with the thinly sliced scallions or minced chives. Serve immediately.
