(1 rating)Ingredients
- ●1 (1.4 kg / 3 lbs) whole chicken
- ●30 ml (2 tablespoons) olive oil
- ●5 grams (1 teaspoon) salt
- ●2.5 grams (1/2 teaspoon) black pepper
- ●5 grams (1 teaspoon) dried thyme
- ●5 grams (1 teaspoon) dried rosemary
- ●1 large lemon
- ●100 grams (1/4) yellow onion
- ●2 cloves garlic
- ●475 ml (2 cups) chicken broth
- ●5 grams (1 tablespoon) chopped fresh parsley
Instructions
- 1Pat the whole chicken dry with paper towels. Rub the olive oil all over the chicken, then season generously with salt, black pepper, dried thyme, and dried rosemary.
- 2Place one lemon half and the smashed garlic cloves inside the chicken cavity.
- 3Place the metal trivet (or steamer rack) inside your Instant Pot. Pour in the chicken broth and scatter the chopped yellow onion at the bottom.
- 4Carefully place the seasoned whole chicken on top of the trivet in the Instant Pot. Squeeze the remaining lemon half over the chicken.
- 5Secure the lid on the Instant Pot and set the valve to the "Sealing" position.
- 6Select the "Manual" or "Pressure Cook" setting and set the cooking time for 25 minutes on high pressure for a 3 lb chicken. For a larger chicken (up to 4 lbs), increase the time to 30 minutes.
- 7Once the cooking cycle is complete, allow for a natural pressure release for 10-15 minutes, then carefully turn the valve to "Venting" for a quick release of any remaining pressure.
- 8Carefully remove the chicken from the Instant Pot and transfer it to a cutting board. Let it rest for 10 minutes before carving or shredding.
- 9Serve immediately, garnished with fresh parsley if desired. The cooking liquid can be strained and used as a flavorful broth.
