Ingredients

  • 1/2 cup Green or Brown Lentils
  • 1 cup Chicken or Vegetable Broth
  • 1 cup Cherry Tomatoes, halved
  • 1/4 small Red Onion, finely diced
  • 1 clove Garlic, minced
  • 2 tablespoons Fresh Parsley, chopped
  • 1/4 cup Plain Yogurt
  • 1/2 Lemon, juiced
  • 1 tablespoon Olive Oil
  • 1/4 teaspoon Salt, or to taste
  • 1/8 teaspoon Black Pepper, or to taste

Instructions

  1. 1Rinse the lentils thoroughly. In a small saucepan, combine the rinsed lentils with 1 cup of chicken or vegetable broth. Bring to a simmer over medium-high heat, then reduce heat to low, cover, and cook for 15-20 minutes, or until the lentils are tender but still hold their shape. Drain any excess liquid and let the lentils cool slightly.
  2. 2While the lentils are cooking, prepare the fresh ingredients. Halve the cherry tomatoes, finely dice the red onion, mince the garlic, and chop the fresh parsley.
  3. 3In a small bowl, whisk together the plain yogurt, fresh lemon juice, olive oil, salt, and black pepper until well combined. This is your zesty lemon-herb yogurt dressing.
  4. 4In a medium bowl, combine the cooled lentils, halved cherry tomatoes, diced red onion, minced garlic, and chopped parsley.
