Lomo Saltado (Peruvian Beef Stir-Fry)

Where the Andes meet the Wok. This Peruvian-Chinese fusion dish features tender beef strips stir-fried with onions, tomatoes, and soy sauce, served with crispy french fries and rice.

Ingredients

  • 500g sirloin steak
  • 1 red onion
  • 2 tomatoes
  • 1 Aji Amarillo chili
  • 3 tbsp soy sauce
  • 1 tbsp red wine vinegar
  • 300g french fries
  • 2 cups white rice

Instructions

  1. 1Sear Beef: Season beef strips. Sear in a smoking hot wok/pan for 1-2 mins. Remove.
  2. 2Stir Fry: In same pan, stir fry onions and chili until charred. Add tomatoes for 30 secs.
  3. 3Sauce: Return beef. Add soy sauce, vinegar, and oyster sauce. Toss to coat.
  4. 4Combine: Toss in french fries at the last second (or serve on side).
  5. 5Serve: Garnish with cilantro and serve with rice.
