Lomo Saltado (Peruvian Beef Stir-Fry)
Where the Andes meet the Wok. This Peruvian-Chinese fusion dish features tender beef strips stir-fried with onions, tomatoes, and soy sauce, served with crispy french fries and rice.

- ●500g sirloin steak
- ●1 red onion
- ●2 tomatoes
- ●1 Aji Amarillo chili
- ●3 tbsp soy sauce
- ●1 tbsp red wine vinegar
- ●300g french fries
- ●2 cups white rice
Instructions
- 1Sear Beef: Season beef strips. Sear in a smoking hot wok/pan for 1-2 mins. Remove.
- 2Stir Fry: In same pan, stir fry onions and chili until charred. Add tomatoes for 30 secs.
- 3Sauce: Return beef. Add soy sauce, vinegar, and oyster sauce. Toss to coat.
- 4Combine: Toss in french fries at the last second (or serve on side).
- 5Serve: Garnish with cilantro and serve with rice.
