- ●2 cans (15oz) black beans
- ●2 cups white rice
- ●2 ripe plantains
- ●2 onion
- ●1 red bell pepper
- ●3 cloves garlic
- ●1 cup crushed tomatoes
- ●2 tsp cumin
- ●for frying oil
Instructions
- 1Boil Beef: Simmer steak in water with salt and onion until tender (1-1.5 hours). Shred into thin strands.
- 2Make Sofrito: Sauté onion, peppers, and garlic. Add tomatoes, cumin, and shredded beef. Simmer 20 mins.
- 3Prepare Beans: Simmer black beans with aromatics and seasonings until thickened.
- 4Fry Plantains: Slice ripe plantains diagonally. Fry in oil until golden brown and caramelized.
- 5Serve: Plate the beef, beans, rice, and plantains together.
