Ingredients

  • 500g (1.1 lbs) flank steak
  • 2 cans (15oz) black beans
  • 2 cups white rice
  • 2 ripe plantains
  • 2 onion
  • 1 red bell pepper
  • 3 cloves garlic
  • 1 cup crushed tomatoes
  • 2 tsp cumin
  • for frying oil

Instructions

  1. 1Boil Beef: Simmer steak in water with salt and onion until tender (1-1.5 hours). Shred into thin strands.
  2. 2Make Sofrito: Sauté onion, peppers, and garlic. Add tomatoes, cumin, and shredded beef. Simmer 20 mins.
  3. 3Prepare Beans: Simmer black beans with aromatics and seasonings until thickened.
  4. 4Fry Plantains: Slice ripe plantains diagonally. Fry in oil until golden brown and caramelized.
  5. 5Serve: Plate the beef, beans, rice, and plantains together.
