Ingredients

  • 2 ciabatta rolls
  • 2 (4 oz each) chicken breasts
  • 2 tablespoons pesto
  • 2 slices provolone cheese
  • 1/4 cup balsamic glaze
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. 1Season chicken breasts with salt and pepper.
  2. 2Grill or pan-fry in olive oil over medium heat until cooked through (about 5-7 minutes per side).
  3. 3Spread pesto on the cut sides of the ciabatta rolls.
  4. 4Place a slice of provolone cheese on the bottom half of each roll.
  5. 5Place the cooked chicken breast on top of the provolone.
  6. 6Drizzle with balsamic glaze.
  7. 7Top with the other half of the ciabatta roll.
  8. 8Grill the assembled sandwiches for 1-2 minutes per side, until the bread is toasted and the cheese is melted and gooey (optional).
  9. 9Slice the sandwiches in half and serve immediately.
