Ingredients

  • 1 cup cooked rice
  • 1/2 can black beans
  • 1/4 cup English cucumber
  • 1/4 cup coleslaw mix
  • 1/4 avocado
  • 1 teaspoon soy sauce
  • a sprinkle mozzarella cheese stick, shredded

Instructions

  1. 1Place the cooked rice in a bowl.
  2. 2Spoon the rinsed and drained black beans over the rice.
  3. 3Add the diced cucumber and coleslaw mix on top of the beans.
