Spinach, Feta, and Cherry Tomato Scramble

A quick and easy Mediterranean-inspired scramble with eggs, spinach, feta cheese, and cherry tomatoes. Perfect for a light brunch or lunch.

Ingredients

  • 4 large eggs
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes
  • 4 ounces feta cheese
  • 1 clove garlic
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. 1Chop the spinach, halve the cherry tomatoes, and crumble the feta. Mince garlic if using.
  2. 2Sauté the spinach and cherry tomatoes (and garlic, if using) in a pan with olive oil until the spinach wilts and the tomatoes soften.
  3. 3Whisk the eggs in a bowl with salt and pepper.
  4. 4Pour the eggs into the pan with the vegetables. Let them set a little on the bottom, then gently push the cooked egg to the side, allowing the uncooked egg to flow underneath.
  5. 5Once the eggs are mostly cooked but still slightly moist, stir in the crumbled feta. Cook just until the feta is warmed through.
  6. 6Serve immediately.
