- ●2 cups fresh spinach
- ●1 cup cherry tomatoes
- ●4 ounces feta cheese
- ●1 clove garlic
- ●1 tablespoon olive oil

Instructions
- 1Chop the spinach, halve the cherry tomatoes, and crumble the feta. Mince garlic if using.
- 2Sauté the spinach and cherry tomatoes (and garlic, if using) in a pan with olive oil until the spinach wilts and the tomatoes soften.
- 3Whisk the eggs in a bowl with salt and pepper.
- 4Pour the eggs into the pan with the vegetables. Let them set a little on the bottom, then gently push the cooked egg to the side, allowing the uncooked egg to flow underneath.
- 5Once the eggs are mostly cooked but still slightly moist, stir in the crumbled feta. Cook just until the feta is warmed through.
- 6Serve immediately.
