Ingredients

  • 2 medium apples
  • 1 tablespoon lemon juice
  • 1/2 cup chopped celery
  • 1/4 cup finely minced shallots
  • 1/2 cup roughly chopped toasted pecans
  • 1/4 cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon maple syrup
  • to taste salt
  • to taste black pepper

Instructions

  1. 1In a large bowl, toss the diced apples with the lemon juice to prevent browning.
  2. 2Add the celery, toasted pecans, and shallots to the bowl with the apples.
  3. 3In a small bowl, whisk together the mayonnaise, Greek yogurt, and maple syrup.
  4. 4Pour the dressing over the apple mixture and gently toss to combine. Be careful not to overmix.
