Ingredients

  • 1.5 lbs chicken pieces
  • 4 oz turkey bacon
  • 8 oz sweet Italian chicken sausage
  • 8 oz mushrooms
  • 1 pint cherry tomatoes
  • 5 oz spinach
  • 1 (15-ounce) can white beans
  • 6 cups chicken broth
  • 1 tbsp balsamic vinegar
  • 1 tsp dried rosemary
  • 1/2 tsp dried sage
  • 2 tbsp fresh parsley
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1In a large pot or Dutch oven, heat olive oil over medium heat.
  2. 2Add turkey bacon and cook until lightly browned. Add sweet Italian chicken sausage and mushrooms, cook until browned.
  3. 3Add chicken and cook until browned.
  4. 4Add rosemary and sage and cook until fragrant.
  5. 5Pour in chicken broth and bring to a simmer.
  6. 6Add white beans.
  7. 7Simmer until chicken is cooked through, about 30 minutes.
