The Vegitalian-Inspired Sweet Potato & Provolone Hero
By @chef51
This sandwich is a symphony of flavors and textures: tender, caramelized sweet potato, sharp provolone, briny olive tapenade, creamy mayo, and a bright, vinegary kick, all piled high on crusty bread. It's substantial, satisfying, and utterly delicious.

Ingredients
- ●1 large Sweet potato, peeled and sliced into 1/4-inch thick planks
- ●2 tablespoons Olive oil
- ●1/2 teaspoon Dried oregano
- ●1/4 teaspoon Salt
- ●1/4 teaspoon Freshly ground black pepper
- ●2 Crusty hero rolls or ciabatta loaves, split lengthwise
- ●5 Provolone cheese slices
- ●4 tablespoons Good quality olive tapenade
- ●4 tablespoons Mayonnaise
- ●1/4 cup Fresh arugula or baby spinach
- ●1/4 small Red onion, very thinly sliced
- ●1 tablespoon Red wine vinegar
- ●1 teaspoon Olive oil (for dressing)
- ●1 pinch Salt (for dressing)
- ●1 pinch Freshly ground black pepper (for dressing)
Instructions
- 1Preheat your oven to 400°F (200°C). On a baking sheet, toss the sweet potato planks with 2 tablespoons of olive oil, oregano, 1/4 teaspoon salt, and 1/4 teaspoon pepper until evenly coated. Spread them in a single layer. Roast for 20-25 minutes, flipping halfway through, until tender and slightly caramelized at the edges.
- 2While the sweet potato roasts, lightly toast the cut sides of your hero rolls or ciabatta. You can do this in the oven for a few minutes or in a toaster oven.
- 3On the bottom half of each toasted roll, spread 2 tablespoons of mayonnaise generously. On the top half, spread 2 tablespoons of olive tapenade.
- 4Place the roasted sweet potato planks evenly over the mayonnaise on the bottom half of each roll. Top the sweet potato with the provolone cheese slices.
- 5If you like a slightly melty cheese, you can carefully place the bottom halves of the sandwiches back into the warm oven for 2-3 minutes, just until the cheese softens.
- 6In a small bowl, lightly toss the arugula (or spinach) and thinly sliced red onion with 1 tablespoon of red wine vinegar, 1 teaspoon of olive oil, a pinch of salt, and a pinch of pepper.
- 7Pile the dressed arugula and red onion mixture on top of the cheese and sweet potato. Place the tapenade-spread top halves of the rolls onto the sandwiches. Press gently, slice in half if desired, and serve immediately.
